Not every leaf is the same. If over steeped some leaves create a bitter or astringent mouth feel. If steeped for long periods some herbals become stronger enhancing the teas flavour. To get the most out of your leaves it is best to follow specific steeping instructions. I have outlined the recommended steeping times for each type of leaf.

Begin by measuring out 2 grams of tea (1 teaspoon) for every 6 ounces of water used.
Bring fresh water to a temperature of 80C/175F. Immerse the tea leaves into the water for
1-3 minutes.
Removing after the intended time to avoid the liquor from becoming bitter. Lay the leaves flat to dry and re-steep as many times as desired. Once the leaves no longer provide the intended flavour, replace with fresh leaves.

*Herbal teas can be steeped longer for a stronger flavour, however some ingredients may add a bitter flavour if steeped too long.
